🍎 Apple Crisp Cookie Cups: The Ultimate Bite-Sized Dessert
What happens when cozy apple pie meets chewy oatmeal cookies? You get these Apple Crisp Cookie Cups — the ultimate handheld dessert that’s perfect all year round.
This sweet idea came from my friend Sharai, who was obsessed with my Caramel Cookie Cups and practically begged for a new twist. Who could say no to that?
Even though apple pie is often seen as a fall dessert, trust me — these warm, gooey, cinnamon-spiced cookie cups are welcome any time. 💛
🍏 Step 1: Make the Homemade Apple Pie Filling
Ingredients for the Filling:

6 cups Granny Smith apples (about 4–5), peeled & chopped

1 Tbsp lemon juice

½ cup light brown sugar (packed)

½ cup granulated sugar

¼ cup cornstarch

1 tsp ground cinnamon

Pinch of nutmeg & salt

2 cups water
Instructions:

Toss the chopped apples with lemon juice in a bowl. Set aside.

In a saucepan, stir together sugars, cornstarch, cinnamon, nutmeg, salt, and water.
